Banana Chocolate Chip Muffins
Ingredient
- 3 bananas
- 2 eggs
- 3/4 cup greek yogurt
- 1/4 cup maple syrup
- 1 tsp vanilla
- 2 cup oat flour (or blended oats)
- 1 scoop vanilla protein powder
- 2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/2 tsp salt
- 1 cup chocolate chips
Instructions
- Preheat Oven: Preheat oven to 350°. Mash bananas in a bowl & add all wet ingredients. Mix, but don't over mix.
- Mix: Pour oat flour (or blended oats) into the banana mix along with all the other dry ingredients. Mix (again don't over mix) until just combined. Add chocolate chips & fold into batter.
- Bake: Scoop 1/4 cup of batter into a prepared muffin tin & top with more chocolate chips. Pop into oven for 14-18 minutes until baked through.
- Cool: Remove muffins from oven & let cool for 5 minutes before transferring to a wire rack to cool completely.
