Banana Chocolate Chip Muffins

  1. Preheat Oven: Preheat oven to 350°. Mash bananas in a bowl & add all wet ingredients. Mix, but don't over mix.
  2. Mix: Pour oat flour (or blended oats) into the banana mix along with all the other dry ingredients. Mix (again don't over mix) until just combined. Add chocolate chips & fold into batter.
  3. Bake: Scoop 1/4 cup of batter into a prepared muffin tin & top with more chocolate chips. Pop into oven for 14-18 minutes until baked through.
  4. Cool: Remove muffins from oven & let cool for 5 minutes before transferring to a wire rack to cool completely.
