  1. Heat: olive oil and sesame oil in a large skillet over medium-high heat. Add ground chicken and cook while breaking up the meat into crumbles.
  2. Add: diced onion, hoisin sauce, soy sauce, rice wine vinegar, and chili garlic sauce. Cook for about 5 minutes until onion is soft and translucent and most liquid has been absorbed, stirring occasionally.
  3. Add: minced garlic and ginger. Cook for 1 minute until fragrant.
  4. Add: water chestnuts, green onions, salt, and pepper. Cook for about 2 minutes until tender.
  5. Taste: and adjust seasonings if needed, adding more soy sauce, hoisin, pepper, etc. as desired.
  6. Spoon: about 1/4 cup of the mixture into lettuce leaves to serve.
