  1. Preheat Oven: Preheat your grill to 350ºF, setting it up for indirect heat and adding soaked wood chips for smoke.
  2. Mix: In a disposable aluminum pan, combine the sausage, pickled jalapeños, Velveeta cheese, Rotel tomatoes, minced garlic, diced onion, Mexican cheese blend, and your choice of liquid.
  3. Cook: Place the pan on the grill away from the coals or heat source to cook with indirect heat.
  4. Mix: Stir the mixture every 10 minutes, adding more wood chips as needed to maintain smoke.
  5. Cook: Cook until the cheese is melted and the dip is heated through, approximately 40 minutes.
